Energy Bars

Anyone can make these easy, quick, and delicious oatmeal energy bars. They make for a fun pretend baking show, or they can be done with the whole family. Either way, they taste amazing! Plus, this is a great way for parents to get their kids to like baking, because these don’t require an oven! They are super after-school snacks, and can be made a lot of ways, but I’m going to share the ones my family likes the most. CLASSIC CHOCOLATE CHIP & PEANUT BUTTER ENERGY BAR:
-1 cup dry oats
-¼ cup peanut butter
-¼ cup honey
-½ cup mini or regular sized chocolate chips
-dash of salt
-½ teaspoon vanilla (optional)
DOUBLE CHOCOLATE OATMEAL BALLS -
1 cup dry oats
-¼ cup peanut butter
-¼ cup honey
-2 tablespoons cocoa powder
-dash of salt
-½ teaspoon vanilla (optional)

-1 cup dry oats
-¼ cup peanut butter
-¼ cup honey

1 cup dry oats
-¼ cup peanut butter
-¼ cup honey
-2 tablespoons cocoa powder

- In a medium bowl, add all of the ingredients and stir to combine well. The mixture should be a bit sticky. Refrigerate for at least 30 min.
- Use a spoon to scoop about a tablespoon of the cookie ball mixture into your hand. Roll into a ball. Repeat with the remaining mixture, unless you want some to look like squares for some reason.
- Eat! Or, you can store them in the fridge for up to a week. Yum!
