Pretzel Bites

Pretzel Bites are really easy, fast, and fun to make. (Plus Delicious!) This recipe makes 2 Dozen, and takes about an hour to prepare this chewy snack and dinner. You will need to make the dough first and then the topping. Kids (and other people) would like this because it takes long enough to rid boredom, but not long enough to cause boredom. It is also delicious and quick! You may need a little bit of an adult’s help, but otherwise it’s super easy! DOUGH:

  • 2 ¼ cups all purpose flour
  • ½ teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon instant yeast
  • 1 cup warm water

TOPPING:

  • ½ cup very hot water
  • 2 tablespoons baking soda
  • Coarse, kosher salt
  • 3 tablespoons butter (melted)  

INSTRUCTIONS: 
  1. Mix the flour, salt, sugar, and yeast in a big bowl or in a mixer. Then add the water. Mix well, adding more flour if needed, to create a soft, smooth dough. It should be soft, but not too sticky.
  2. Kneed for 4-5 minutes until the dough is soft and stretchy. Grease the inside of a gallon sized ziplock bag using nonstick cooking spray. Put the dough inside. Close the bag, and leave room for the dough to expand. Let it stay there for 20-30 minutes, or until it has doubled in size. (You might have to wait a whole hour.) The dough can also rised in a greased, covered bowl. 
  3. Preheat the oven to 500 F. I know that sounds really high, but it helps the pretzels stay soft and chewy on the inside, and a nice brown color on the outside. Line two half sheet pans with parchment paper and grease with cooking spray. (Or, if you’re feeling adventurous, you can just grease it without parchment paper.) 
  4. Put the dough on a floured or greased counter top. Cut the dough into 4 thick strips. Cut each strip of dough into around 6-8 pieces. It doesn’t have to be perfect, just think about how much you want to make. 
  5. Combine the baking soda and very hot water together and whisk to combine well. (It can just be combined in a little bowl.) 
  6. Dip the dough into the baking soda and water combination. Let the extra liquid drip off. Then place the pretzel bites a couple inches apart on the prepared pans. 
  7. Sprinkle them with coarse, kosher salt. Let them sit for 10 minutes. During this, they should be uncovered. 
  8. Bake for 7-8 minutes, or until golden brown. 
  9. Remove the pretzels from the oven and quickly brush the melted butter on them. Keep brushing all the pretzel bites until all the butter is gone. It probably seems like a lot, and we thought it was a lot, but that’s what gives these bites most of their taste. (Hopefully you aren’t going on a diet when you eat these.)
